Thought I’d re-write this after I twittered about it, and it seemed to have a lot of interest. I’ve been experimenting a bit with various versions since I was keeping myself on the straight and narrow in Taiwan eating this for breakfast:-

I also kept getting told in Taiwan that Chicken Soup was the cure-all for all ills. And as a particularly stressed parent of many children, who works stupid hours and never rests, I thought I could do with a bit of care. And I like soup.

I’ve tweaked and twiddled – and here’s what I had this morning, which I’m pretty happy with. Modifications are easy, and suggestions below.

First step – make the chicken stock (which sounds a bit scary if you’ve never done it, but essentially it’s just simmering raw chicken until well cooked, with other stuff in a pan, then straining it).

Chicken stock (about a pint).

Some chicken – like, a couple of thighs, or three drumsticks, or something.
A pint of water.
A leek, or an onion, or several spring onions, or something, chopped into 10mm lengths.
Maybe a carrot, chopped up.
I like some ginger – either crushed (from a tub), or sliced (from root).
Some garlic is nice (but people complain if you stink).
I chuck in some RICE WINE at this stage too.
Ground black pepper.

Bring all this to the boil, then simmer for about an hour with the lid on.
After an hour, pull the chicken out to cool (you’re going to use that), and then sieve the rest of the stuff off from the liquid, and discard the boiled carrot/onion etc…

That liquid that you have left is chicken stock. If you want to really be posh, you can then chill it, which will make the fat rise to the surface and you can skim it off. I don’t bother.

Making the soup.

You need:-
Chicken (shredded off the bone, what you just used to make the stock). I eat the lot. Including the skin. Sliced up into bits it goes down well, and I figure it’s good for you.
Fresh egg noodles (like these) – not dried ones, like Pot Noodle. Wet ones. You can find them in the salad section in supermarkets – they’re used sometimes for putting in salads…
1 spring onion (chopped finely)
a handful of coriander (cilantro) chopped finely – I like lots. It really adds something to the flavour.
a half chilli, chopped finely, to flavour
soy sauce to taste.

Put the shredded chicken, spring onion, coriander, chilli in a bowl, then pour over boiling hot chicken stock. This heats everything up, and sort of cools down too so you don’t have to sit for ages whilst it cools down before you can eat it.

I might take some pics some time, but it’s not hard and you get the idea I guess. Hope you like it.

Todmorden, Yorkshire – about half past three, January 21, 2010 – Shedfire Design announced today that it has redesigned the structure of its Marketing and Product Management departments to create one central group that will oversee the entire product lifecycle – from thinking things up, to getting someone to make them, to getting people to buy them. This innovative approach to brand management will activate key competencies within the organization to further strengthen Shedfire’s product portfolio and support its aggressive growth plan.

In addition to promoting a number of key individuals within the existing organization, Shedfire has hired a General Manager (GM) who will optimize brand growth, set and drive strategic planning and oversee the development of resources within category portfolios. John (Jackie) Bebb, joins the organization on February 15, bringing a diverse background in global brand management, sales, business development and operations, mostly recently in a Global Vice President role with the Top Man concession stand, in Rochdale CoOp.

Shedfire will also welcome a new Marketing Director to its team beginning January 25. Abdul Kumar will leverage several years experience as a marketing consultant with a specialization in leading and implementing integrated sales (in Ali Baba’s Kebab Shop on Rochdale Road) and marketing initiatives to set Shedfire’s marketing objectives and strategies.

As part of the total redesign, the Shedfire Product Management group will relocate from the shed in the garden to the kitchen table. The new Product Management structure will create more accountability towards four key product categories: Road, Mountain, Recreation/Urban and Wives/Girlfriends. It will include a Global Product Director to oversee each major category and a Global Product Manager responsible for the Wives/Girlfriends category. We’re still not quite sure who will continue to lead the Product Management group in a Vice President role working collaboratively with the GM to set the innovation roadmap for Shedfire, but we’ll work something out.

“Bringing our product management and marketing teams under one roof allows us to think more holistically about the way we develop and market products,” said Brant Richards, President. “We are strengthening the team by developing our internal talent and adding new thinking and complimentary knowledge and skills to the team, which supports our relentless pursuit to become a more consumer-insight driven company, and besides, the shed was getting quite cold, and we might be moving soon to Hebden Bridge anyway as you can’t get a decent cup of coffee in Tod since Matt’s lass Sammy fell out with them from Cafe Modo.”

Chris Kovarik has started the 2010 season off with a bang, winning his first National Championship since 2002. Claire Buchar also claimed victory in the women’s race so this is a great start to the season by both of them. The team now has 2 National Champions in both their respected countries. Nice one guys.

Here is the full report from “Mountain Bike Australia”

In a tightly fought race for the downhill title at the SRAM Australian Mountain Bike Championships in Adelaide today, Chris Kovarik won his fourth national title while world number one, and pre-race favourite, Sam Hill crashed on the final corner just metres from the finish line.

Hill had set the fastest time in the qualifying round to be the last rider out of the start house and looked set to claim the title until it all came undone in sight of the line. Unscathed from the fall he got back up and crossed the line to finish fifth.

Having won the Australian title three years running, from 2000 to 2002, it was a pleasing return to the top step of the podium for Kovarik.

“Although it was pretty good I wasn’t really happy with the time. I was hoping to go two seconds faster than my qualifying time but I’ve just done the same time,” Kovarik said.

“Hard luck to Sam coming off on that last corner and giving it to me. I was just watching the times and think he would have had it by half a second (if he didn’t crash).”

For a disappointed Hill it was just the beginning of his season long campaign to reclaim the rainbow jersey of world champion.

Overshadowed by the drama of Hill’s crash, the silver medal went to Shaun O’Connor and the bronze to Josh Button.

The women’s event was dominated by Canadians Claire Buchar who was the quickest, followed by Leigh Douglas and the first of the locals Claire Whiteman who was crowned Australian champion.

Buchar has taken the opportunity to train in Australia over the summer to avoid the cold and snow of the Canadian winter, while Douglas now lives in Tasmania and is one of the dominant performers on the domestic circuit.

“They really push us along and both Claire and Leigh have been helpful this weekend with pointers on how to improve,” Whiteman said shortly after all three hugged in appreciation of their respective performances.

A humble Buchar said “It’s great to get some racing in during our winter and I love racing here in Australia. This is an awesome track and there was a great atmosphere.”

Plenty of attention was also paid to the under-19 men’s race where rising young gun Troy Brosnan of South Australia blitzed the field to snatch the win ahead of Daniel Lavis and Aden Wyber.

A relieved Brosnan said that he made a few mistakes but it was a great relief to win particularly with support he had from a very vocal crowd.

Much is expected of Brosnan as he has been touted as Australia’s next big thing in downhill racing and today’s win will only add to his growing reputation.

Emily Hockey won the women’s under-19 title ahead of Holly Baarspul and Christie Batt.
